A week ago I told you about avocado oil. Lately I have been talking a lot about this love fruit. There are so many reasons to love avocado and there are also many ways to eat it. It’s time to get creative! Fire up the grill and don’t forget the avocado. Avocado oil, since it has a high smoke point, is great for grilling as well.

- 1 tsp olive oil
- 1/4 tsp kosher salt
- 1/2 tsp chipotle chile powder
- 1/4 tsp black pepper
- 1 pound sirloin steak
- 16 ripe cubes of Avocado
- 16 cherry tomatoes
- 16 (1-inch) squares red onion
- 8 (8-inch) skewers
- Cooking spray
- 1/4 tsp kosher salt
- Combine olive oil, 1/4 tsp kosher salt, chipotle chile poweder and black pepper; rub evenly over top sirloin .
- Cut steak into 32 cubes .
- Thread steak, avocado, cherry tomatoes and onion alternately onto skewers.
- Coat with cooking spray; sprinkle with 1/4 tsp kosher salt .
- Place skewers on grill rack coated with cooking spray . Grill 5 minutes or until done, turning skewers occasionally for an even char
