Lemon Poppy Seed Bites

Need something sweet? You’re not alone. Usually on the weekend most people, including myself, find themselves thinking about something sweet and decadent. For me, I will usually go for gluten-free pancakes or maybe a piece of gluten-free cake. Another great sweet treat you can try to make is Lemon Seed Poppy Bites. Bites are my go to because you can add a ton of good stuff into them. They taste really good and pack a whole lot of vitamins and minerals. Ever thought of adding protein? Adding protein is another great way to transform a sweet dessert. If you’re going to eat it, there may as well be some nutritional gain. Always ask yourself, what am I getting out of this? Sure it may taste great (we all splurge) but if it’s not benefiting you …no nutritional gain. How good is it really? True Story. Yes, I love cake, but I eat desserts that are made with beneficial ingredients. Throw in some protein, use beet juice as a natural sweetener.

Enjoy the good life, joie de vivre but do it well. Treat yourself and nourish your body; it’s that simple.

Lemon Poppy Seed Bites

Ingredients
  • 1 scoop fermented vegan proteins+ vanilla
  • 1ā„2 tsp poppy seeds
  • 1 lemon squeezed, and zest grated
  • 2 tbsp ground flax seed
  • 1ā„2 c coconut flour
  • 1ā„4 c ground almonds
  • 1ā„4 c ground pumpkin seeds
  • 2 tbsp maple syrup
  • 6 tbsp unsweetened vanilla almond milk
  • [b]Coating:[/b]
  • 1ā„4 c coconut flakes
  • 2 tbsp poppy seeds
Instructions
  1. Place almonds and pumpkin seeds in food processor. Pulse until coarsely ground. Place in separate bowl off to the side.
  2. Add coconut flour, flax seed, fermented vegan proteins+ and lemon zest to food processor and pulse quickly to thoroughly mix ingredients.
  3. Add in maple syrup, lemon juice, almond butter and almond milk. Pulse until doughy texture is achieved.
  4. Mix in ground almonds, ground pumpkin seeds, and poppy seeds by hand and roll into bite size portions.
  5. In separate bowl combine coconut and poppy seeds. Roll each bite in mixture to coat as desired.
Notes
Makes approximately 1 dozen. They freeze well and taste great when thawed.
