Those who know me, know that when it comes to hotel accommodations I am quite picky. Some would argue that you barely stay in your hotel. I completely disagree and feel where you stay contributes to the overall travel experience. Here are 3 New Hotels You Have To Visit This Summer. As the year progresses I will add more must-stay hotels to the list. There are so many great boutique hotels around the world.

GRAND HOTEL MINERVA – Italy
Italy is definitely on my list of places to visit. Grand Hotel Minerva is a boutique hotel located in one of Florence’s finest squares, Piazza Santa Maria Novella. You will be in awe of its breathtaking decor that’s a bridge between modernity and the dark era of the Middle Age. This hotel, formerly Gran Locanda Della Minerva, was first opened in 1869. Longfellow (1807-1872), a famous American poet was one of its first famous guests. 21 years later, something old, has become new again with upscale renovations that still preserve the previous work of the architect, Edoardo Detti, and Carlo Scarpa. Grand Hotel Minerva is “named for a goddess, Minerva, it’s only natural that a woman is the subject of the most significant fine artwork on display at our hotel” (Emilio Greco’s “Large Bather VI).
Take in stunning views of Florence on their rooftop pool bar which has been called ” seventh heaven”. Dine on classic dishes made with fresh, local and seasonal ingredients at one of their on-site restaurants. The beauty of Grand Minerva is that they still want you to feel like you stepped into a magical time in history. ANDAZ SCOTTSDALE RESORT & SPA – Arizona
So many of you love our Bachelorette Scottsdale Arizona feature. A few of you have asked me if I could recommend more places to stay. Lucky for you, there is new resort and spa in Scottsdale. Andaz Scottsdale Resort & Spa is the perfect escape if you are looking to travel somewhere in North America. Since I am all about adulting these days, I prefer to stay at a hotel where relaxation and rejuvenation is a top priority. When I travel I like to have a good time but I definitely don’t want to look like I need a vacation from my vacation. What’s the point? Views of Camelback Mountain, r&r at the Palo Verde Spa & Apothecary and workshops at the Artist in Residence Program caught my attention. Who doesn’t love a vacation that nourishes both your mind and soul?!
The design of Andaz is a combination of “mid-century modern design with local art to create an exceptional Sonoran Desert experience”. The goal of Alexander Girard was to create a space that made this 201-bungalow on 23-acres to feel like a hidden urban oasis. On-site restaurants, Weft & Wart Art Bar + Kitchen and Turquoise Pool Bar, serve Sonoran Desert-inspired dishes made with locally sourced seasonal ingredients.
Great features: Pet-friendly, breakfast is served until 3 pm, fitness center and spa wellness program that’s “based on the natural healing powers of the earth’s most sacred resources”. All the treatment blends at the Palo Verde Spa & Apothecary are made with locally-sourced botanicals and natural aromatics.
HENRIETTA HOTEL & RESTAURANT – London
If I didn’t live in Toronto I would live in London. I love London and now have another excuse to visit thanks to Henrietta Hotel & Restaurant. The Henrietta Hotel is located on London’s famed Henrietta Street which “dates back to 1634 noting painter Samuel Scott and actress Kitty Clive as former residents”. What’s unique about this hotel is that it is the combing of two townhouses both historic abodes. For instance, the first townhouse (No. 14), “once housed the office of Victor Gollancz Ltd, who published George Orwell, Kingsley Amis and John Le Carré”. The second (No. 15), was designed by HE Pollard, “is an Anglo-Dutch style featuring red brick and terracotta”.
Sip on specially crafted cocktails influenced by the past created by historians Jared Brown & Anistatia Miller. Minibars in each room also come stocked with house-made cocktails.
Great Features: Located off Covent Garden Market, therefore close to restaurants, theatres, museums, and cinemas.
